1 ham hock
2 potatoes, cut into 1 inch cubes
1 onion, cut into 1/2 inch chunks
1 teaspoon salt
3 tablespoons soy sauce
Place the ham hock, potatoes and onions in a greased 8x8 inch baking dish and spread deli-style phyllo-style over the ham meat.
Melt soy sauce in a small saucepan, stirring sparingly. Pour over the dish and continue to heat.
Cover and chill overnight so it does not steam.
After 2 hours, remove meat from pots and pat dry. Cut the potatoes into cubes and replace.
