Easy Spinach Dip Recipe

Ingredients

1 (3 ounce) package cream cheese, softened

1 cup shredded mozzarella cheese

1 (8 ounce) can sliced mushrooms

1 (4 ounce) can sliced mushrooms

1 large onion, sliced

1 teaspoon chopped fresh parsley

salt and pepper to taste

Directions

In a large bowl, mix cream cheese and mozzarella cheese. Shape into small triangles by rolling out large portions of cream cheese mixture. You may need to discard portions of cream cheese mixture as needed. Do not wrap – you will tear. Roll into small rolls and cut into 12 pieces. Place in a medium bowl.

In a large bowl, mix sliced mushrooms, sliced mushrooms, onion, salt and pepper. Mix all together and place seam-side down in a large saucepan. Pour the cream cheese mixture over the mushrooms and onions. Heat to 450 degrees F (230 degrees C).

When the dill drizzles have melted, spread dill over cream cheese mixture in the 8 x 8 inch dish. Roll the dill out to the size of 10 rolls and stuff the rolls with the mixture. Roll edges of cream cheese mixture into rings around the edges of the rolls. Place rolls seam side down in a 9 inch square pan.

Bake at 400 degrees F (200 degrees C) for about 1 hour. Reduce oven temperature to 350 degrees F (175 degrees C). Bake for an additional 30 minutes, or until the rolls are golden brown. Cool for 10 minutes, then refrigerate for at least 2 hours before serving.

I tried this out for my family this morning. Everyone loved it but me, my husband and I only used a couple of tablespoons of butter but it was still pretty thin so I ended up making topping with cream cheese and I butter it. It was still pretty thin so I didn't add any additional flour and waited until the cheese had solidified before adding the flour. It was perfect and ready to be made again!

Wonderful sandwich that's quick, easy and delicious! I toasted the sandwiches, sprayed the inside of the relish Case and the outside of the bun, and buttermilk-poached them. My husband picked this recipe and said it was fantastic. Will make again.
