Meat Tenderloin Recipe

Ingredients

1 pound lean ground beef

2 tablespoons olive oil

1 (8 ounce) package onion broth

1 (8 ounce) can canned minced onion

2 red bell peppers, seeded and cut into 1 inch pieces

1 medium carrot, thawed and sliced

1 medium potato, sliced

1/4 cup chopped green onions

1 teaspoon dry mustard

2 1/2 cups shredded mozzarella cheese

Directions

Place lean ground beef in a small bowl. Heat olive oil in skillet over medium heat. Saute onion until golden brown; stir in broth while stirring. Reduce heat to medium high, and stir in minced onion, red pepper, carrot, potato and green onion. Simmer stirring constantly, about 10 minutes.

Stir beef mixture into broth mixture, stirring with stirring constantly. Allow to simmer. Stir in cheese and the tomato paste. Simmer for about 30 minutes to blend flavors.

Easy, delicious, nutritious. My husband praised the smoothie for being peanut-free (his preferredity). I followed the recipe exactly (juice from one cup) and did half shake instead of draining. I used UNsalted pecans, broke off ends, and discarded any shells. I felt comfortable using premade ingredients and wasn't fussy about the added ingredients. Even my husband liked the premade mixture so it was a delightful birthday gift!
