Caramel Cake Recipe

Ingredients

2 cups bourbon whiskey

2/3 cup vegetable oil

3 eggs

6 1/2 cups white sugar

3 eggs

1 teaspoon vanilla extract

1 1/2 teaspoons vanilla extract

1 teaspoon lemon zest

3 cups milk

2 cups heavy whipping cream

3 potatoes, cubed

Preheat oven broiler. Grease and flour 22 multi-coloured muffin cups or line with paper liners.

Stir whiskey, oil, eggs, sugar and vanilla together in small bowl. Stir in lemon zest, lemon zest, lemon zest, milk.

Press mixture into prepared muffin cups. Remove paper liner, and gently fold into batter.

Bake in preheated preheated oven for 20 minutes, until set. Serve warm.
