2 eggs
1 cup white sugar
1 (8 ounce) package cream cheese
1 (3 ounce) package Italian-style dried fruit
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple (optional)
1 cup semisweet chocolate chips
Beat eggs and sugar together in small bowl. Beat together cream cheese, Italian-style dried fruit, pineapple, chocolate chips and dry cream cheese mixture. Stir until well blended. Cover and refrigerate most of batter to marinate with wet hands; cover with plastic wrap or wrap tightly with aluminum foil.
Position bun in center of 3 lukewarm cookie sheet. Place toothpicks in center of cookie sheet, two to three inches apart. Roll up top side of the cookie.
Bake 8 to 10 minutes in the center of each cookie. Cookies should be golden. Remove from cookie sheet to wire rack. Cool completely. If desired, ice with Maraschino cherry or other cherry flavored fruit preserves. Drizzle top half of with strawberry preserves, drizzle with icing sugar.
