3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup butter
1/4 cup boiling water
1 cup white sugar
4 eggs
1 teaspoon vanilla extract
1 cup milk
1/2 teaspoon cream of tartar
1 tablespoon fine granulated sugar
1 (8 ounce) package cream cheese, softened
1 cup blueberries
1 cup flaked coconut
1 (15 ounce) can evaporated milk
1 (4 ounce) can sliced almonds
1 (8 ounce) container frozen whipped topping, thawed
Sift together the flour, baking powder, baking soda and sugar. Set aside.
In a large bowl, cream together the butter, boiling water and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
Gently fold in the whipped topping, then frost with chocolate frosting.
