Coconut Cream Pie Recipe

Ingredients

1 (15 ounce) can sweetened coconut milk

1 (8 ounce) package cream cheese, softened

2/3 cup white sugar

1 cup butter

1 1/2 cups all-purpose flour

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon salt

3 egg whites

6 tablespoons milk

Directions

Preheat oven to 400 degrees F (200 degrees C).

In a medium bowl, mix coconut milk, cream cheese, sugar, butter, flour, vanilla extract, baking powder, cinnamon, salt, egg whites and milk. Mix until well blended.

Apply a thin ribbon of buttercream to the bottom of a 9 inch round baking pan. Spread in the center of the cream cheese frosting. Dust with coconut milk mixture.

Bake in the preheated oven for 60 minutes, or until toothpick inserted into center of pie comes out clean. Pour topping over pie.

When cool, slice into rounds. Serve chilled with whipped cream or whipped cream and whipped cream frosting.
