2 cups white sugar
2 teaspoons baking powder
1 egg
2 cups buttermilk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Preheat the oven to 400 degrees F (200 degrees C). Grease 9 muffin cups or line with paper muffin liners.
Stir together the sugar, baking powder, egg and buttermilk. Set aside. Heat oven to 350 degrees F (175 degrees C).
Meanwhile, stir together the flour and vanilla and set aside. Fold together the buttermilk mixture into the dry ingredients. Stir batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 minutes.
