1 large potato, peeled and cubed
1/3 cup butter
3 tablespoons lemon zest as needed
2 eggs
4 slices Cheddar cheese
salt and pepper to taste
1/2 cup honey mustard
Preheat oven to 350 degrees F (175 degrees C).
In a skillet, melt butter. Stir lemon zest into butter, and add eggs and cheese. Cook over medium heat, stirring occasionally until eggs are melted. Salt and pepper to taste. Pour mixture into 9x13 baking dish.
Bake in preheated oven for 10 minutes.
In a bowl, combine shallots, lemon zest, egg, cheese, salt and pepper. Mix thoroughly. Remove from oven and sprinkle with remaining cheese.
Place potatoes on baking tray and let stand for at least 10 minutes before slicing.
