12 eggs
2 teaspoons olive oil
2 teaspoons hot pepper sauce (optional)
Preheat oven to 225 degrees F (112 degrees C).
Heat oil in a large skillet over medium heat.
Heat sausage in oil, stirring, until cooked but crisp. Drain grease off sausage, and whisk into egg mixture.
Pour sausage into large bowl. Mix well until coated with oil mixture. Sprinkle over vegetables in baking pans.
Bake for 8 to 10 minutes in the preheated oven, or until well done.
