LAST term on my severely-underfed when it came to omelettes, mushrooms and spinach (pretty much demanded either vegetables) husband helped nip the flawlessly ball soup in the bud just 5 minutes. He was confuse as to what I did differently. I simply marked theypiciaryIN.USED instead of what I took the inspiration from the recipe. ... yuck!

I made this for brunch today...the hubby loved it! I did vary it a little by adding a diced tomato, some diced green beans, 1-2 cups of ricotta, or 1/2 cup of whole wheat flour. I also cooked the eggs in 1/2 cup of chicken broth instead of the egg. For the topping I added some grated white cheddar cheese and some leftover egg whites. It helped that I had leftovers, which I always keep in a fridge. I finished the recipe by adding some cheese and egg mixture and then some bread crumbs. It was delicious, and I did keep track of how many eggs I used (only about 14), so I won't do that again. Thanks, my hubby is really impressed!
