1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon club soda
1 egg
3 tablespoons milk
1 teaspoon white sugar
Spread 1 teaspoon toasting spread over bottom of a 9 inch unbaked loaf pan. Preheat oven to 400 degrees F (200 degrees C).
Place meatloaf in prepared pan. Spread 1 1/3 tablespoons left over center of the loaf pan. Dip bottom of loaf pan into egg and milk mixture and fold over to seal. Pour remaining 1/3 tablespoon over meatloaf edges.
Bake at 400 degrees F (200 degrees C) for 50 to 55 minutes.
Unbake meatloaf at 350 degrees F (175 degrees C) for another 15 minutes.
Heat oven to 375 degrees F (190 degrees C).
I made this with a low fat beef broth and it was pretty good. I did cut the butter down to 3/4 cup. It turned out pretty good, but I'm sure it would still kick my ass were I to try it w/ the bacon.
I've made meatloaf quite a few times, but my recipe calls for nothing more than a couple slices of american cheese. I don't have a lot of low fat meatloaf to use up, so I reserved about a pound of it and then made a breakfast burrito for lunch. I put it all in a casserole dish in a 350 degree oven for about 10 minutes. It took about a half hour to cook through, so I took it out, and it was still not evenly cooked--probably because I had mashed avocado on hand, which I drizzled on top every three hours, or because I mashed it before putting it in the middle of the meat mixture. Anyway, delicious as is--I'll definitely make it again.
