1 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup butter or margarine, cut into sticks
2 eggs
1 cup white sugar
1/4 teaspoon vanilla extract
2 cups milk
2 black collins
Grease 10 muffin cups or line with paper muffin liners.
In a large bowl, cream together 3/4 cup flour and baking powder. Mix with a pastry knife or pastry bag, set aside.
In a separate medium bowl, cream together butter and sugar until well blended. Stir eggs, sugar, vanilla in a blender or food processor into flour mixture until just blended. Mix together with flour mixture until well blended. Finally, stir in milk and collins. Beat mixture into flour mixture until just blended.
Bake in preheated oven for 22 to 25 minutes or until a toothpick inserted in center of muffin comes out clean. Serve warm.
