1 (8 ounce) package cream cheese, softened
2 tablespoons olive oil
1 onion, chopped
2 (10 ounce) cans organic tomatoes, with liquid can be added for additional flavor
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried sage
3 cups vegetable broth
1 cup soft crackers (optional)
3 tablespoons butter
1 pound ground pork
1 cup vinegar
1 jar celery and bay leaf pasta sauce
3 (20 ounce) cans diced tomatoes (optional)
1 (6 ounce) can tomato paste
In a medium saucepan, combine cream cheese, olive oil, onion, tomatoes and garlic and heat until well mixed. Stir in thyme, sage and tomato paste.
Bring to a boil, then reduce heat to low. Simmer, uncovered, until mixture thickens enough to coat. Heat through and adjust seasoning to taste.
