1 1/4 cups all-purpose flour
2/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups butter, chilled
2 large eggs, beaten
1 (8 ounce) can crushed pineapple, with juice
4 cups white sugar
1 cup vegetable oil
1 1/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla extract
1 cup chopped almonds
1 cup chopped pecans
Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
In a large bowl, mix flour, brown sugar, baking powder, baking soda and salt. Place butter in a separate small bowl, and beat egg and pineapple into dry ingredients until smooth. Stir batter into wet ingredients to form a batter. Drop by rounded spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until edges are dark. Allow to cool completely. Cut into squares.
