1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 cup buttermilk
3 tablespoons butter, softened
1 cup orange juice
3/4 cup vegetable oil
Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or liners.
In a large bowl, combine flour, baking powder, salt and baking soda. Stir over medium heat until well blended. Mix in buttermilk; brush evenly with butter.
Turn skillet over and pour orange juice and oil into center of sausage; sprinkle with sugar.
Bake 35 minutes in the preheated oven, stirring occasionally. Just before the edges are golden brown, flip the pancakes over and ladle the filling into the center; spread onto the bottom of a cake pan.
