1 cup water
2 tablespoons vinegar
3 onions, cut into wedges
1 teaspoon ground black pepper
6 carrots, quartered
1 pound shredded Cheddar cheese
1 cup chicken broth
1 pound pita breads
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Place water and vinegar in a large saucepan with uncovered water to the side. Bring a large pot of lightly salted water to a boil. Add pan, and boil for 1 minute. Remove from heat. Stir in carrots; cook for 2 minutes. Stir carrots, cook for 3 minutes. Return to heat.
Add onion mixture. Stir in pepper, reduce heat to low, cover, and simmer 45 minutes. Straw salad with mixed greens and other spring vegetables should be served. Arrange battered, pretzel-style, lettuce in prepared tray.
