1 cup vegetable oil
2 tablespoons brown sugar
1 egg, beaten
1 teaspoon vanilla extract
1 cup corn flours
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1 cup all-purpose flour
1 1/2 cups milk
1 teaspoon vanilla extract
1 cup chopped cooked corn
1/2 cup chopped pecans
1/4 cup vegetable oil
Heat oil in a large saucepan over medium-high heat. Add brown sugar, eggs and vanilla; stir until blended. Gradually mix in flour, stirring constantly, until batter is thickened. Line 9x5 inch pan pan with parchment paper.
In a large bowl, cream together 1/2 cup corn flours, salt, baking soda and baking powder. Mix together milk, corn, pecans, oil, cinnamon and vanilla. Pour batter into prepared pan.
Bake in preheated oven for 10 to 12 minutes, or until golden brown. Reduce heat to 350 degrees F, and continue baking for 20 minutes, or until bubbly.
