2 tablespoons butter
1 pound melt-in-mouth whole wheat flour
4 eggs, beaten
1 teaspoon vanilla extract
2 1/2 cups white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
6 bananas, quartered (optional)
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (9 inch) 9x5 inch loaf pans. Place the butter in a small saucepan. Stir in the eggs, vanilla, sugar, baking soda and baking powder; boil over medium/low heat. Boil 4 minutes, stirring.
Melt the whole wheat flour in large bowl. Stir in the melted butter and stir into heavy beaten eggs with , stirring constantly, until all ingredients are thoroughly combined. Stir in the sugar, baking powder and baking soda. Gradually stir in the flour mixture. Spread half of mixture on the prepared baking sheet.
Bake for 20 to 25 minutes in the preheated oven, or until the bottom of the loaf springs back when touched. Cool loaf thoroughly, remove bananas and refrigerate for about 1 hour.
