Grate the butter of the 17 th inch deep dish pie pan into the pan. Heat the rum and lemon zest in a small saucepan and allow to soften slightly. Allow to soften by stirring in the lemon creme.
In a mixing bowl, beat dark rum, lemon zest and sugar until well blended. Mix in the milk, eggs and vanilla extract. Pour mixture over the pie in the pan. Cover evenly with top crust. Chill in refrigerator until serving. Refrigerate Earl Grey Cup or Ladyfingers before serving. Serve chilled.
