1 cup butter
1 cup white sugar
2 eggs
2 teaspoons lemon extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup lemon juice
1 1/2 quarts lemon-lime flavored soda
3 cups sliced fresh cherries
Preheat oven to 375 degrees F (190 degrees C). Wrap baking sheets with waxed paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs slowly, then stir in the lemon extract. Combine the flour and baking powder; stir into the creamed mixture alternately with the lemon juice. Stir in cherries and lemon-lime soda. Drop by Heaping tablespoons onto the cooled baking sheets.
Bake for 12 to 15 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Allow to cool before transferring to the serving bowls.
