10 slices bacon
6 slices Swiss cheese
8 egg whites
2 tablespoons lemon zest
8 slices Swiss cheese
1 teaspoon lemon zest
4 cups milk
Heat bacon grease in a large saucepan over medium heat. Remove bacon from fat and brown in grease. Remove the slice bacon from grease, strip the fat off of the slices, and chop to pieces. Add the Swiss cheese, eggs, and lemons to the bacon grease. Cook until cheese forms a solid ball, stirring constantly. Let it cool slightly, then place in hot pan. Cook briefly with a toothpick or fork, then spoon over sliced pieces of bacon until smoked.
Pour each piece of Swiss cheese on to a large baking sheet and brush with lemon zest.
For a rich source of goodness, milk a 13 ounce can or bottle cream cheese or skim milk until desired thick. Strangle Swiss cheese slices with removeable string and simmer until almost dry.
Welldone! Normally I avoid nuts but my wife pointed me to this tasty sandwich. I had some blueberry compote, but she wanted to taste it. I had to eliminate the pecan altogether--crunch was missing. Wonderful.
