1 cup butter, softened
1 cup white sugar
1 egg white, beaten
1 (3 ounce) package instant chocolate pudding mix
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, egg white, pudding mix and flour. Beat in the baking powder and baking soda; stir in the flour mixture. Pour batter into cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until a knife inserted into the center of the cookie comes out moist and crisp. These cookies are done when the center of the cookie comes out clean. Return them to the prepared baking sheet.
