1 1/2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons finely chopped fresh vegetables
1 teaspoon honey
1 teaspoon orange zest
1 teaspoon lemon extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
Preheat oven to 275 degrees F (135 degrees C). Grease and flour two 8x4 inch baking pans.
In a small bowl, mix lemon juice, lemon zest, lemon zest, vanilla extract, sour cream, vegetables, honey, orange zest, lemon extract and flour. Mix until smooth. Stir in baking powder, baking soda, salt and nutmeg. Pour mixture into prepared pans.
Bake in preheated oven for 45 minutes. Cool on a rack, then roll out to room temperature.
