1 3/4 cups butter, softened
2 1/2 cups brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups honey
1 1/2 tablespoons all-purpose flour
1 teaspoon baking powder
6 1/2 cups rolled oats
1 1/2 cups chopped pecans
1/2 cup chopped almonds
5 cups brown sugar
1 cup rolled oats
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter, brown sugar and eggs. Beat in the vanilla and honey until well blended. Combine the flour, baking powder and 1-1/2 cups of the rolled oats, stir into the creamed mixture. Mix together the remaining 1 1/2 cup of oats, pecans, almonds and brown sugar.
Drop cookie dough into the egg and brown sugar mixture two or three times. Sprinkle with chopped pecans and almonds.
Bake for 12 to 15 minutes in the preheated oven. Serve warm or cold.
