1 cup white sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 eggs
1/2 cup vegetable oil
3/4 teaspoon salt
3 cups rolled oats
1 cup brown sugar
1 1/2 cups vegetable oil
4 cups rolled semisweet chocolate
1 cup semisweet chocolate chips
1/2 cup butter, melted
1/2 cup butter, melted
1 cup chopped pecans
1/4 cup mini chocolate chips
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine sugar, soda, first 7 ingredients, eggs, oil, salt, oats, chocolate and chocolate chips. Mix well. Spread mixture evenly into an 8x12 inch pan.
Bake in preheated oven for 45 minutes. cool slightly, but open until just about set. Remove parchment paper and cut into the center of cookies. Chill overnight to allow cookies to stiffen. While cookies are chilling, melt butter, brown sugar mixture and mini chocolate chips, stirring over low heat until smooth. Remove from refrigerator. Place cookie slices into prepared pan. Chill at least 4 hours before cutting into squares.
