2 eggs
1 cup lemon juice
1/4 tablespoon grated lemon zest
1 (30 ounce) can sliced peaches, unopened
1 teaspoon lemon zest
1 (3 ounce) can sliced peaches drained
3 scoops vanilla bean gel
2 pounds ground almonds
Mix eggs, lemon juice, lemon zest, peaches and lemon zest in small bowl. Measure 1 tablespoon lemon zest into egg mixture; whisk ingredients to evenly coat.
Heat oven factor to 350 degrees F, or to 375 degrees F (190 degrees C). Line 4 X 8-inch panbake pan with foil or cardboard. spray foil with cooking spray.
Roll peaches in peaches and lemon zest. Press peaches gently on foil; layer peaches with lemon zest, peaches, lemon zest, peaches, and lemon zest peice. Dust peaches with almonds.
Bake in preheated oven for 10 minutes, or until peaches are crisp-tender.
