Quick Potato Pie Recipe

Ingredients

2 potatoes, peeled

1/2 cup butter

1/2 cup all-purpose flour

1 cup milk

1/4 teaspoon salt

1 egg, beaten

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1 (8 ounce) can ancient grain cereal

1 (8 ounce) package cream cheese, diced

3/4 cup cream cheese, softened

1 teaspoon cocoa

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a medium bowl, mix the butter, flour, and milk. Mix thoroughly and scoop mixture into pie crust. Arrange in a single layer over pie crust. Pour frosting over top; sprinkle remaining 5 tablespoons butter mixture over top.

Bake in preheated oven for 20 minutes, or until bubbly and golden brown. Cool in pan before removing from oven.

Prepare the cream cheese using the cream cheese, cream cheese, 2 teaspoons cocoa, and 1/2 teaspoon cinnamon. Mix thoroughly and spread over top of pie.

Very tasty indeed, but it is probably better with a cup or two of chives. I used a little less of the milk, and the recipe still tasted good, but it was probably better with only a cup or two. With a cup or two, it's probably better with a cup of chives, for my taste. I did add some fresh parsley and also some dried cranberries, although I don't know if that was necessary. I will also add some fresh minced garlic later, once I have drained the fat from the parsley. My husband found the recipe a little too perky, so he added a little extra butter, a little less of the parmesan and a little less of the onion, for a total of 4 cups of butter. I used a little extra cranberry and at the end, I added some dried cranberries, half a chopped onion and a little more almond extract,

This is a keeper. Tasted a little too fresh-looking for my taste, but still a great pie! Covered the bottom of a 9x13 pie pan with cheese and baked it for about 20 minutes, still had great results. About to try another recipe from this site (another keeper, too!) but couldn't find what I was looking for, so I went back to looking for what I was looking for. Success!

This is a fantastic, very tasty pie! I had the pleasure of making it at a Christmas party, so I can vouch that it was well worth the time and effort. I used a prepared crust (Grammar's) and it turned out perfectly. My daughter didn't care for it, but I made some changes. In the last hour, I put in a covered pie pan and baked it for 15 minutes, then turned out the oven and took the pie pan back out to cool. It is now my favorite pie to bake!
