1 cup margarine, softened
1 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 1/2 cups canned pumpkin puree
1 cup chopped pecans
1 cup chopped dates
1 cup chopped walnuts
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour two 8x8 inch pans. Mix together margarine and sugar. Cut the margarine into the flour and baking soda. Mix together with a mixer. Combine pumpkin, pecans, dates, and walnuts. Roll the mixture into 1 inch balls. Place the balls in the prepared pans.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of each pan comes out clean. Cool on rack for 10 minutes, then turn out onto a wire rack and cool completely.
