Cashew Chicken Wings Recipe

Ingredients

1 (4 pound) whole chicken, cooked and skinned

1 teaspoon mixture of ginger seasoning

1/2 cup ready-to-serve ice cream

1 cup cooked, cubed potatoes

Directions

Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.

Combine the ginger seasoning with frozen cold potatoes and leave until chilled. Remove any excess fat.

Preheat oven to 300 degrees F (150 degrees C).

Lay half of the potatoes in the bottom of prepared baking dish, allowing them to cook over simmering water until tender but still pliable. Cover potatoes with potato slice. Place remaining three potatoes under water to cook and uncovered, about 10 minutes.

Bake 60 to 70 minutes, or until potatoes begin to develop an opaque color.

We used cashews, 1 cup of diced bananas, 1/2 red figs, 1/2 green beans, 1 teaspoon of almond extract, and 1/2 of a homemade substitute called "Ladyfinger" (also available at Sprouts). The result was pretty good, but I don't know that I'd make it again. The flavor and texture weren't up to par, but again, I don't know that I'd make it again. The recipe is crispier than it sounds, and the almond lends a nice flavor. I did halve the recipe and used a whole egg, instead of just the white. I also left my pizza shells a little too big, so the skillet was empty (but full of egg shells, which I didn't squash). Super easy way to satisfy your sweet tooth!

We used a local cheeses' garlic and turned out fantastic. Cut back on the salt some. Fantastic!!!
