1 onion, diced
2 tablespoons olive oil
2 garlic cloves, minced
1/4 pound shredded mozzarella cheese
1 (1 pound) loaf fresh linguini bread, torn into fragments
In a small bowl, place finely chopped onion, olive oil, garlic and mozzarella cheese. Mix well and shape into balls. Shape into 4 or 5 rolls.
Preheat oven to 375 degrees F (190 degrees C).
Bake rolls in preheated oven until bubbly, about 15 minutes.
Remove rolls from oven. Brush rolls with glaze, then skin with egg, then cut in half. Brush with juice mixture, then sprinkle with bread pieces.
Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes on each side, or until rolls are golden brown. Remove rolls from oven, skin side down. Brush tops of rolls with egg glaze and occasionally with lardner (optional). Bake another 10 minutes, or until bubbly. Serve immediately.
