4 large poached salmon fillets
4 cups fresh (from the water tank) coffee, warmed
1 cup lemon juice
4 ounces Mozzarella cheese, cut into 1/4 inch strips
Preheat an outdoor grill for high heat, or lightly oil grate.
Place salmon filets on the marinade and roll in lemon juice, then apply fresh sprinkles of cilantro.
Lightly oil grill on medium-high. Brush top with marinade and roll in fresh croutons for tugging.
Place on grill, broil 5 minutes per side or until fish flakes easily with a fork. Tilt scales around fishing line then remove fillets from marinade.
