1/4 cup butter
1/4 cup white sugar
2 eggs
2 tablespoons lemon juice
1 teaspoon lemon zester
2 teaspoons vanilla extract
1 teaspoon lemon zester
3 tablespoons lemon juice
3 tablespoons margarine
1 teaspoon vanilla extract
Preheat oven to 450 degrees F (220 degrees C). Grease a 9 inch square pan.
In a large bowl, cream together the butter, sugar, eggs, lemon juice and lemon zest. Beat in the lemon zest, lemon zest and lemon zester. Mix in margarine, stirring well. Stir in vanilla and lemon zest. Pour batter into prepared pan.
Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
