Steak Eboom Recipe

Ingredients

1/2 cup shelled orange zest, divided

1 cup chopped shallots

1 pound steak, cut to 1/4 inch thick

1 cup chopped onion

3 1/2 cups red wine

1/2 teaspoon salt

1/4 teaspoon crushed black pepper

12 ounces Italian-style dry red wine

10 ounces Swiss cheese

Directions

Preheat grill for high heat.

In a medium saucepan over high heat, saute orange zest and shallots in 2 tablespoons butter, about 5 minutes.

Add steak and brown all sides; add onion, wine, salt, pepper and saute until brown and onion is tender.

Stir in dry red wine and stir lightly, scraping bottom of pan to prevent browning. Adjust seasoning and color by adding additional water.

When steak is tender, stir in Swiss cheese and coat. Add Italian-style wine by the 1/2 cup, stirring lightly so that it coats the meat in the pan. Do not allow to drizzle all over steak or serve on its own.

Smoke 1 or 2 tablespoons of the steaks to your heart's content, coating well. Hold steaks over charcoal or over a grill to expand browning effect.

really good and fairly quick and easy to make!!!!! i sprinkled the bread with parmesean, oregano, pepper and a tiny bit of garlic powder (hubby loved garlic). i also added a huge pinch of toasted sesame oil to the top of the sandwich and wrapped it around the whole sucker. its huge, and quite delicious. only thing is--like some people--i added extra cookie chunks to the top of the sandwich, and that too. but i didn't add any actual cookies. so really simple and delicious.
