1/2 cup shelled orange zest, divided
1 cup chopped shallots
1 pound steak, cut to 1/4 inch thick
1 cup chopped onion
3 1/2 cups red wine
1/2 teaspoon salt
1/4 teaspoon crushed black pepper
12 ounces Italian-style dry red wine
10 ounces Swiss cheese
Preheat grill for high heat.
In a medium saucepan over high heat, saute orange zest and shallots in 2 tablespoons butter, about 5 minutes.
Add steak and brown all sides; add onion, wine, salt, pepper and saute until brown and onion is tender.
Stir in dry red wine and stir lightly, scraping bottom of pan to prevent browning. Adjust seasoning and color by adding additional water.
When steak is tender, stir in Swiss cheese and coat. Add Italian-style wine by the 1/2 cup, stirring lightly so that it coats the meat in the pan. Do not allow to drizzle all over steak or serve on its own.
Smoke 1 or 2 tablespoons of the steaks to your heart's content, coating well. Hold steaks over charcoal or over a grill to expand browning effect.
very good, a little bland, i added 2 tbls. cream cheese a little chili powder, still liked it but would prefer without the sugar.. will make again...and will try not to make lemon!!!
