1 pound small French sausage
1 cup fresh mushrooms, sliced
1 1/4 cups shredded mozzarella cheese
1/3 cup Italian sausage seasoning
1 (16 ounce) can Italian-style diced tomatoes with juice
1/3 cup grated Parmesan cheese
1/2 cup chopped onion
In a large skillet over medium-high heat, heat the sausage and fry to desired brownness. Remove from skillet and drain grease.
Add the mushrooms and stir gently until mushrooms are opaque and pliable. Stir in mozzarella cheese and Italian seasoning. Pour into a large skillet.
Meanwhile, in a large bowl combine the tomatoes with juice, mozzarella cheese, onion and sausage. Mix together; mix into the sausage mixture and cook over medium-high heat for approximately 1 minute, stirring constantly. Reduce heat to medium-low and allow to cook, stirring occasionally, for 5 minutes.
