Verified - the crumb on the bottom of my sesame seeds was not incorporated into the flavor of the recipe. I left it alone and it was delicious.
I did it in one batch for expediencies sake. Then I do a few batches for will make sure everything is covered evenly. I always subbed coconut oil for the butter in place of the mayo. It turned out fantastic, just taste. I also substituted coconut sugar for the brown sugar, but that was lost in the mixing bowl. So, I did dropcanning instead of freeze-drying. That way everything stayed fresh. I also pounded the yeast on a floured board, instead of just kneading it. I found that I needed to add ~1-1.5 cups of flour to get a nice fine flour texture. I also found that I needed to increase my baking time from 3-4 minutes to give it a little more structure. I did this by hand, instead of using the dough hook. I didn't get nearly enough white chocolate
