4 pounds lean ground beef
1 teaspoon salt
2 tablespoons olive oil
1 onion, cut into 1/2 inch cubes
1 green bell pepper, cut into 1/2 inch pieces
1 cup apple cider vinegar
1 1/2 teaspoons dried dill weed
1 teaspoon dried rosemary
1 teaspoon dried thyme, crushed
1 teaspoon dried basil
3 tablespoons tomato paste
1 cup sliced mushrooms
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, blend the beef, salt and olive oil. Mix in the onion, green bell pepper, apple cider vinegar, dill weed, rosemary, thyme, basil and tomato paste. Pour mixture into a 2 quart casserole dish. Place meat mixture over meat mixture in dish and sprinkle with mushrooms.
Bake meatballs in preheated oven for 45 to 50 minutes, or until meat meatballs are hot and juices run clear.
