Eggnog Cookies Recipe


1/3 cup butter, softened

1/2 cup white sugar

1 cup brown sugar

1 egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon lemon extract

1/2 teaspoon nutmeg


Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a medium bowl, cream together the butter and brown sugar until smooth. Stir egg, brown sugar, brown sugar mixture, flour, baking powder, baking soda and lemon extract in small bowl over medium heat until emulsified. Remove from heat.

Drop cookie dough into the mixture by tablespoons, using about 1/4 cup for each cookie. Drop by rounded spoonfuls onto the prepared cookie sheet.

Bake for 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
