1 (9 inch) pie crust, baked
1 (2.5 ounce) package instant Pecan Butter Cookies, divided
1 (3 ounce) package instant Pecan Butter Cookies, divided
1/2 cup white sugar
1 egg
1 cup boiling water
1 1/2 cups chopped pecans
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine cookies, egg, boiling water, pecans and remaining 1/2 cup sugar. Mix thoroughly. Pour mixture into baked pie crust.
Press remaining cookie mixture over pie crust. Bake for 4 to 5 minutes in the preheated oven.
