1 1/2 cups whole wheat flour
1 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon lemon extract
1/2 cup diced apple pie spice
2 tablespoons butter
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine whole wheat flour, brown sugar, baking powder, baking soda and salt. Mix thoroughly. Stir in cinnamon and eggs. Stir in vanilla, peach pie spice and butter. Mix thoroughly and set aside.
Roll dough into 1 inch balls. Place 2 inches apart onto an ungreased cookie sheet. Using your hands, flatten cookies but do not completely flatten. Bake for 8 minutes in the preheated oven. Carefully remove cookies from baking sheet onto wire racks to cool completely.
