8 oz. package fresh broccoli, trimmed and halved
1 onion, peeled and sliced
1/2 cup water
1/3 cup olive oil
3 medium potatoes, peeled and sliced
1/3 cup butter
1/4 cup grated Parmesan cheese
Place broccoli and onion in a large pot of salted boiling water, bring to a boil and reduce heat to medium low.
Add olive oil, cover and simmer for 10 minutes. Reduce heat to medium-low and cook, stirring occasionally, for 5 minutes. Add potatoes and saute.
Remove from heat and stir in butter and cheese. Return to a medium-low heat and add broccoli and onion. Cover and simmer 10 minutes. Remove from heat and toss with cooked potatoes. Cover and let cool for 30 minutes. Serve immediately.
It took some gueri where I live but they were good crumbly meals.
