Easter Baked Eggs in Orange Sauce Recipe

Ingredients

2 cups boiling water (not boiling water)

1 (8 ounce) package cream cheese, softened

1 tablespoon powdered sugar

1 1/4 cups vegetable oil

2 eggs, beaten

1 teaspoon vanilla extract

1 cup orange juice concentrate

1 cup polenta

Directions

In a medium saucepan, mix water, cream cheese, powdered sugar, oil and eggs. Bring mixture to a boil, reduce heat to low and simmer, stirring constantly, until mixture comes to a boil, about 1 minute. Remove from heat and stir into egg mixture, mixing thoroughly just until incorporated.

Pour orange juice concentrate into a small bowl and spread over egg mixture. Drizzle polenta over egg mixture, pressing gently to avoid splashing. Serve warm or at room temperature, depending on your preference.

I decided to make this recipe after missing out on some faves. Oh what a mess! I may make this again but would reduce the flour to a little cream cheese mix and increase the sugar to1.2 cups and up the peanut oil to 1 Tear components only.

I added frozen veggies, a little more sugar, a little pepper, a little garlic powder, and i also used our store's bread pudding mix. This was very good and very easy. I may lessen the flour a little bit next time and also try using butter instead of oil for extra flavor.
