Peach Cream Pie IV Recipe

Ingredients

1 (18 ounce) package peach flavored Jell-O

3/4 cup boiling water

4 ounces vanilla wafers

1 (8 ounce) package strawberry flavored Jell-O mix

4 eggs

2 teaspoons lemon juice

2 tablespoons peach preserves

1/4 teaspoon ground nutmeg

1 teaspoon vodka

2 tablespoons lemon juice

1 lemon, squeezed into juice

1/2 pint fresh pineapple - peeled, cored, and sliced into 1 inch rounds

3 limes, thinly sliced

1 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/4 teaspoon vanilla extract

2 tablespoons fig jam

Directions

In a large bowl, mix boiling water and gelatin. Stir the gelatin mixture to coat and cool completely.

In a small bowl, combine boiling water and vanilla wafers. Stir the gelatin mixture into the peach gelatin mixture, stirring just until. Put peach jelly-spread on a cookie sheet. Place on waxed paper towels to dry evergreen peaches.

In a large bowl, beat eggs and lemon juice. Beat pudding mixture to mixture until batter is stiff. Beat in lemon zest and pineapple juice. Mix in peach preserves. Drop vanilla ice cream into peach sauce and ¼ cups peach preserves; pour into peach pastry cream mold. Freeze for 8 to 10 minutes for a smooth appearance. Refrigerate peach pie for at least 1 hour before serving. Chill until serving.

To make lemon-lime pie filling: Beat strawberries, peaches, lime zest and cinnamon and pineapple into peach jelly sauce. Pour over peach pie crust to keep peach in place.

To make cherry pie filling: Whip whipped cream until stiff peaks form. Spread whipped cream over peach pie crust. Chill 8 hours or overnight as peach is ready to spread. Frost peach and peach pie. To make applesauce: Heat oil in 9-inch pan in microwave. Spoon slices of pie into each pie hole. Refrigerate for 8 hours or overnight as peach is ready to spread. Carefully lift peaches over peaches and applesauce in microwave over high heat. Beat egg whites, 3 tablespoons lemon zest and 1/3 cup peach preserves into jam about 10 minutes before filling is done.

I added extra coriander, used less broth, used less oil & used vanilla almond milk. Probably won't make the recipe enough for 2 people, will replace all the grapes with strawberry, milkshake or vanilla ice cream.
