1/4 cup butter, melted
1/2 teaspoon vanilla extract
1 1/2 cups packed brown sugar
1/4 cup white sugar
1 egg
1 teaspoon baking soda
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
5 1/2 cups rolled oats
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a small bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg, baking soda and flour. Blend in the flour mixture, then stir in the baking soda and vanilla extract. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 9 to 11 minutes in the preheated oven, until a toothpick inserted into the center of each cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
To make the Rolling Cookies: In a small bowl, cream together the brown sugar, white sugar, egg and baking soda. Beat in the flour mixture and brown sugar mixture, then mix in the oats, chocolate chips and peanut butter sandwiches. Remove rolling cookies from oven, and sprinkle with remaining brown sugar, white sugar, egg and peanut butter.
