Orange Raisin Cornbread Recipe

Ingredients

1/2 cup shortening

1/2 cup flour

1/2 teaspoon salt

1/2 cup white sugar

2 eggs

1 (13 ounce) can whole kernel corn, chopped

2 oranges, peeled, sections removed

1/2 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface thoroughly mix shortening, flour, salt and sugar. Combine eggs and whole corn; stir tightly, set aside.

In large bowl, stir carrots, pecans, and raisins till evenly distributed. Stir in pudding mix and 8 ounces cornflakes mixture. Pour filling into prepared 5 round casserole dish. Cover baking dish, and bake in preheated oven for 1 hour, or until golden when pierced with a fork.
