Mushroom Mushroom Casserole Recipe

Ingredients

6 fluid ounces lemon-lime flavored carbonated beverage

1 cup rum

1 cup orange juice

1 cup lemon juice

2 cups sliced mushrooms

1 (12 ounce) package frozen chopped spinach

1 cup shredded mozzarella cheese

Directions

In a saucepan, combine the lemon-lime soda and rum. Bring to a boil. Reduce heat, stir in orange juice, lemon juice, mushrooms and spinach; cover. Cook and stir over medium heat for 1 hour. Remove from heat and let stand 5 minutes to allow flavors to combine.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish. Using a 2 X tablespoon alcohol solution, mix equal parts of the lemon-lime soda and rum mixture and refrigerate mixture overnight.

Press mushroom mixture into prepared baking dish and top with mozzarella cheese.

Bake in preheated oven for 1 hour, or until bubbly and golden brown.

I made these in a muffin tin, and it worked really well. They were super quick and easy, and they tasted good. I used a blend of 4 cheeses and added a clove of minced garlic. I also omitted the salsa. I may make this again.
