6 tablespoons butter
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 tablespoon vinegar
1 (1 ounce) package corn tortillas
Spread the butter in a small bowl. Stir in onion, green bell pepper, vinegar, and corn tortillas. Chill in refrigerator for 1 hour.
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch square pan. Roll the tortillas in the butter mixture until they are 7 inches in diameter. Place on a foil-lined baking sheet.
Bake for 10 to 12 minutes in the preheated oven, until lightly golden. Allow to cool completely.
