2 tablespoons vegetable oil
3 cloves garlic, crushed
1 onion, diced
1 cup sliced mushrooms
1 cup sliced fresh mushrooms
1 (10 ounce) can mixed vegetables
1 tablespoon dried thyme
1 tablespoon dried parsley
1 teaspoon paprika
In a large pot heat oil over medium heat. Saute garlic and onion for a minute, stirring frequently. Remove from heat and stir in mushrooms, mushrooms and mushrooms. Pour in vegetables, thyme and parsley. Bring to a boil, stirring constantly. Remove from heat and stir in paprika. Bring to a simmer, stirring constantly. Cook for 5 minutes, then stir mushrooms and onions into the pot. Reduce heat to low and simmer for 20 minutes, or until mushrooms are tender. Serve hot.
