1 cup butter, softened
1/2 cup unsweetened cocoa powder
1 cup packed light brown sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup raisins
1 (12 ounce) package Raisin Bran Muffins

Preheat the oven to 375 degrees F (190 degrees C). Line a muffin tin with paper liners, and grease or line with cooking spray. In a medium bowl, cream together the butter, brown sugar, eggs, vanilla, lemon juice, and raisins. Stir into the creamed mixture; mix just enough to moisten. Sprinkle raisins over the top of the muffins.
Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of the meringue comes out clean.
