1 1/2 tablespoons vegetable oil
2 tablespoons white sugar
1 egg
2 tablespoons distilled white vinegar
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups whole wheat flour
1 (8 ounce) can whole kernel corn, drained
3 cups whole wheat flour
2 teaspoons baking powder
1 cup raisins
Heat oil in a large saucepan over medium heat. Stir in sugar, egg, vinegar, salt, baking soda and whole wheat flour. Bring mixture to a boil, stirring constantly. Boil, stirring constantly, for 10 to 12 minutes or until mixture is thickened. Remove from heat and stir in whole wheat flour, baking powder and raisins.
Pour mixture into a 9x5-inch baking pan. Cover with aluminum foil and refrigerate overnight.
Preheat oven to 350 degrees F (175 degrees C).
Bake at 350 degrees F (175 degrees C). Bake for 30 minutes. Remove foil and bake for 10 minutes. Cool completely.
